FGC: Spicy Tuna Melts

Are you ready for more fancy grilled cheese sandwiches? Last time we made a delicious little sandwich with sourdough, almond butter, and figs. This week we are all about the tuna melts.

Okay, here's my confession about tuna melts. And this kind of dates me, but since I don't really mind telling you my age (28), I figure whatever. When I was a junior in high school, this awesome show started called The OC. I was obsessed during the first two seasons of that show! In the first season, Seth and Anna (played by Adam Brody and Samaire Armstrong) both order a tuna melt at the school cafeteria, and it's one of the moments that makes them realize they like each other.

I immediately looked up what a tuna melt was, because I had no idea. And I've loved them ever since.

We're also gonna do something a little bit different here, and instead of grilling the sandwich (on the stove top), we're gonna bake it. I'll show you why. I think you're gonna like it.

Spicy Tuna Melts, serves 2-3.

1 package crescent rolls
1 can (4 ounces) tuna
1 tablespoon mayo
1 tablespoon sweet relish
2-3 slices of pepper jack cheese

Drain the tuna and combine with the mayo and sweet relish. Add a little salt and pepper if you like. Since I made you scroll through that ridiculously long photo tutorial, you really don't need me to tell you how to assemble these. You're welcome.

Bake at 375°F for 12-14 minutes. You'll want to cook these a little longer than the package directs, as the addition of the filling will make the bottom layers cook a little slower.

Serve alongside a soup or salad (or both). You can easily pop this in the oven and get your salad thrown together or put the finishing touches on whatever soup you are making. And if you don't fancy tuna melts, you can easily change this up to whatever you like; fill it with pepperoni and mozzarella cheese if you prefer. It's easy to customize and makes a quick and delicious dinner. Enjoy! xo. Emma
