RECIPE: Easter Cookies!

I was in the baking mood the other day, so I thought I’d bake some yummy Easter cookies! I bought all of these cute baking things from Tesco (they’re new pastel range is amaaazing) and on the way out I grabbed their free magazine which had a Sugar Cookie recipe in it so it was meant to be. This was my first time baking in metric (in Canada we use cups) so that was a first! Really happy with the results though and I’m sad they didn’t last until Easter like they were intended to!

Sugar Cookies:
125g softened butter
125g castor sugar
1 egg
1 tsp vanilla extract
250g flour

1. Preheat oven to 190C. Beat butter and sugar together. Next add the vanilla and egg. Gradually add in the flour until everything is mixed in together. You should probably let the dough cool down in the fridge for an hour, but ain’t nobody got time for that so I just carried on and rolled out the dough. It was a bit sticky since I didn’t cool down the dough so perhaps you should make some time for that step unlike impatient Essie.
2. Bake for around 12 minutes until the edges turn slightly golden. Allow the cookies to fully cool before adding the icing.

Icing: I don’t have an exact recipe for the icing, but I mixed icing sugar, butter, a bit of milk and a dash of vanilla together until it was the right consistency. If you want more specific instructions try looking up ‘Royal Icing’.
